Julien Belliards,a native of France, had worked in the hospitality industry since he was young and received formal training in France as a Sommelier. For years he had dreamed of opening his own restaurant. In 2006, he and his wife, Julia, decided to purchase the restaurant Café Rustica in Carmel Valley.
Café Rustica features Alsatian dishes enhanced with Tuscan flavors. Its tables are set for large groups and guests enjoy specialties such as Petrale Sole, Hungarian Goulash, Fresh Salmon, Lamb Filets, pizza, and homemade soup. Due to its growing popularity, reservations are highly recommended for most nights.
To purchase the restaurant, the couple worked with a Financial Development Corporation (FDC) to find the right lender and receive a California Small Business Loan Guarantee. They also accessed additional funds from the Monterey County Revolving Loan Fund. The Belliards were then able to come in with a percentage of their own funds and before they knew it, they owned a well-established restaurant!
